since we are having a rainy day in June:calm:! I am just going with roast turkey, mashed potato, gravy, steamed veges and green salad. I even remembered to defrost turkey.

It's hot here in Germany and even hotter in our top floor appartement, plus I'm trying to lose some weight:
Used our new juicer on carrots, tomatoes, an apple, parsley, celery and half a pepper, drank the juice and ate the fiber "leftovers" mixed in with some cottage cheese :)

I am going out with my friend Trish tonight. We have been friends since the second grade. I"m either eating at her house or we"ll go out for Coney Islands and cheese fries and I"ll bring home some good old Jackson style rice pudding with raisins. Yum!

For those of you who think this is healthy, it follows a Starbucks' blueberry scone for breakfast and Terra chips & cherries for lunch. :boggle:

Tonights Menu: Fried Plaintains, dipped in garlic butter. Baked Salmon, seasoned with lemon Pepper, and maybe, just maybe go out for some of my favorite Rocky Road Ice Cream, yum!

Wow! I would love to eat dinner with you all! It was chilly and rainy here so, we are having Beef Stroganoff, Rice, Salad, and Crescent Rolls. (My son loves Stroganoff, so he is happy!!!:happy: )
2 pounds round steak, cut in thin strips;
2 tablespoons flour;
1 teaspoon salt (I skip this);
Dash of pepper;
2 onions, chopped fine;
one-half pound of chopped mushrooms;
1 clove garlic;
4 tablespoons butter;
1 can beef broth;
1 teaspoon paprika;
1 tablespoon Worcesterhire;
1 can tomato soup;
2 cups sour cream;
2 cups uncooked rice.
Cut meat into thin strips. Dredge in flour, salt, and pepper. Saute onions, mushrooms, and garlic in butter. Add meat and brown lightly. Add broth and simmer meat until tender (several hours). Add Worcestershire and paprika. Add tomato soup. Add a little water during cooking to keep meat tender. Before serving, add sour cream. Cook rice according to directions on box. Serve Stroganoff over hot rice.

There are restaurants here that specialize in them. Jackson is famous for them and do is Detroit. They've even had Coney Island cook offs here. Everyone has their favorite place in town to get their Coneys. If I think of it I'll take my camera along the next time I get them. One time on a trip out here is just not enough. It's not exactly health food or diet food but it's yummy.

Holy Moly I just saw this thread, thanks to Justgreen always thinking about food, a woman after my own heart. Lily Munster and Love My Cop tie for first in my books. I loved every single mention in this thread but those two are right up my alley tonight. Today is the first day that I've decided to not snack at night and try to watch my eating but when I read stuff like this it really plays havoc with my resolve. Argh.

Last night we had mac and cheese from a box. I did add peas, though!
Tonight it's gonna be Amy's chunky tomato soup from a can with sour cream swirled in and some cheese bread sticks I got at TJs. mental note to stop at the grocery store for sour cream We're moving at the end of the month, and I need to use up stuff in the pantry and freezer.

OOH, homemade pizza! Have you ever tried a pizza stone? I have one, but I've never used it except for cookies.
Pizza stones are awesome! When I make home made pizza (using my sour dough ) I always sprinkle some corn meal on the stone before putting the crust on it.

Spaghetti and homeade meatballs for us tonight. I just realized how heavy on the carbs I've been today.:boggle: Hmmm. Egg white sandwich on wheat bread for breakfast, and cous cous for lunch. I guess I didn't plan that out very well. I'll have to double up on the running tonight, and tomorrow morning.:whyme: Maybe I should eat some fruit today-that's carbs too but atleast I'd have balanced things a little better?

I love my pizza stone. :happy:
I used to make dough in my breadmaker every Friday for pizza night when my kids were younger. Haven't done it in a while though. I think it depends on the recipe and can be done either way, but I used to cook my dough for a short while, add toppings and then cook until the cheese was bubbly and crust lightly browned.

I roll out the dough and put it on the stone and poke holes in in all over, except around the edges. Then I cook it for about 15 minutes at 350 degrees, take it out of the oven and build the toppings on it. Sauce , then whatever you prefer, with grated mozzerella ALL OVER THE TOP. :boggle: Then I cook it for another 15-20 minutes until the edge crust is golden brown.

I read that you're supposed to put it in the fridge covered overnight and then take it out and leave it out for a couple days before using it-called proofing. Then it comes out like restaurant style supposibly. I haven't tried it yet and I don't have a pizza stone and peel yet- one of my next purchases I hope. Maybe you can give us all some of your tips for great pizza crust? Thanks in advance.

What I do....when I'm making a batch of dough from my starter, it's usually enough for 3 loaves of bread, so i take 1/3 of that and put it in a ziploc in the fridge until I get ready to make pizza. I usually use it within 3-5 days and when I take it out of the fridge, I let it warm to room temperature in the ziploc before rolling it out for the crust.
I think we got our stone at walmart for less than $12. I love it. :geek:

Justy, you and Kris are synonomous with food now in my books. You seem to post in all the food threads and you have the best ideas and recipes, also I love that Kris posts her evening meal every day. These are some of my favorites as far as reading goes.
Now, tonight I think I will make pork chops with rice and mushroom sauce. I have asparagus in the fridge, so I will also make glazed carrots. NO DESSERT.

For dinner tonight i'm making spag. IT's the easiest thing in the world, and i'm tired. I do the Trader joes spag, I use thier organic spag, organic marinara, and thier frozen mini meatballs(i actually prefer the pork italian sausage, but they were out). I serve it with plenty of parmesan and roasted garlic, garlic bread(think crusty loaf of bread with whole roasted garlic cloves throughout the bread and somet type of cheese melted on top) just warm it up and serve dripping with butter! Yum, i'm making myself hungry!(to bad I need to do the dishes first before i can cook :ooh: For dessert I'm having a milk chocolate bar filled to the brim with hazelnuts! And to top everything off, of course, a nice shiraz!

I so want to eat some but only eat sugary/desserty stuff on the weekends. Generally I don't care for Breyer's ice cream but this stuff is wonderful! Banana anything is my favorite... along with chocolate, of course. I didn't even know that Haagen-dazs makes a banana ice cream! Does it have nuts in it? One reason why I don't like Ben & Jerry's banana ice cream is that it contains nuts. I'm a no-nut girl. :lafhard:

Kiam Bak Chang (ZhongZi) or Savoury Pork Rice Dumpling and Dau Fu Fa (Dou Fu Hua) or Silky Tofu dessert.
The Bak Chang is a Chinese pork dumpling that is usually made during the Duan Wu festival (http://en.wikipedia.org/wiki/Duan_Wu_festival), also known as the Dragon Boat Festival. Made with glutinous rice, shiitake mushrooms, salted duck's egg yolk, chestnuts, mung beans, and belly pork, they're wrapped in bamboo leaves and boiled. Meanwhile, the Dau Fu Fa is a sweet dessert made out of coagulated soy bean milk and eaten with ginger syrup.
Ginger syrup:
3 c. water
1/3 c. brown sugar
A chunk of ginger - about 1.5" thick 3" long.
Peel the skin and any blemishes from the ginger.
Combine the water and sugar in a pot and place over medium high heat.
While you bring the mixture to a simmer, crush the ginger and add it to the simmering syrup.
Keeping the pot at a low simmer - you don't want to boil it or the ginger will become bitter -- cook the syrup for about 10 minutes. Allow to cool.Dau Fu Fa:
11 ounces (about 1 lb) soy beans
water for soaking beans
7 cups water
edible terra alba (aka edible gypsum/calcium sulfate) (about 1 teaspoon)
Rinse the soybeans until the water runs clear. Put the beans in a pot and add water. (The water should be three times the amount of the soybeans). Soak the beans until they expand to 2 or 2 1/2 times their original size.
Meanwhile, mix 1/2 cup water with the cornstarch and terra alba and set aside.
Drain the beans and discard the soaking water.
Add 6 more cups of water. Blend the soy bean and water mixture (if using a small blender you will have to do this step in batches).
Use a gauze such as cheesecloth to squeeze out the liquid.
Retain the liquid and throw the dregs away (or chuck them into your compost pit).
Pour the liquid (soybean milk) into a pot. Cook on low heat until it comes to a boil and is foaming nicely.
Remove from the heat and filter out any scum, using the gauze again if necessary.
Return to the pot and bring to a boil again, adding the edible terra alba when boiling.
Turn off the heat but do not move the pot (do not move the soymilk until it has jelled or the silky smooth texture will be ruined).

I didn't even know that Haagen-dazs makes a banana ice cream! Does it have nuts in it? One reason why I don't like Ben & Jerry's banana ice cream is that it contains nuts. I'm a no-nut girl. :lafhard:

Princess YumYum's Cheesy Enchilada Casserole
1 Pound of ground beef
4-5 large flour tortillas
1 can of Cheese soup
1 can of spicy cheese soup
1 can of cream of chicken soup (I know , this sounds weird!)
1 can of Rotel diced tomatoes and green chilis, drain the liquid off
1 small onion, diced
A buttload of cheddar or cheddar/jack cheese, grated (2-3 cups)
About a half a bag of crushed regular Doritos
While I'm frying (on medium heat) a pound of ground beef, I prepare the casserole dish.
I use large flour tortillas to line an oblong glass casserole dish, I think it's an 8 1/2 x 11". I bend the tortillas into the corners and have about 1" sticking up over the top of the dish. Usually it takes about 4 tortillas, cutting two of them into sections so you don't have alot of tortilla on the bottom (just one layer).
I always grate the cheese, chop the onion and mix up the soups/rotel in a bowl while the meat is cooking.
Once the beef is done, drain it if need be and add it to the bowl with the soups and the Rotel, mixing well. Add the diced onion.
Pour half of this over the flour tortillas and spread it evenly, making sure you get it in the corners. Add a light sprinkling of the grated cheese. Then put a light layer of crushed Doritos. Pour the remaining meat mixture over the Dorito layer and spread it out evenly. Do some more cheese and another layer of doritos, heavier on the Doritos this time.
Pop in the oven for 45 minutes at 350 degrees. Once it's warmed up well, pull it out and put a heavy layer of the grated cheese on top and stick it back in the turned off oven for 5 minutes to melt it.
We always wait about 15 minutes before cutting it, to let it set up a bit.

I'm having my mom over this evening, and she is going to help me make "Rellenos De Papa- "Stuffed Potatoe Balls". We usually make about 20 at a time, and freeze the ones we dont eat. They are very tast, and filling...a little fattening too, but whos counting calories!

2 lbs. potatoes
4 tbsp. butter
½ tsp. salt
1 egg

Prepared cooked picadillo (ground beef (http://www.qklinkserver.com/lm/rtl3.asp?si=19903&k=ground%20beef) and/or pork seasoned with sofrito)
oil for frying
Peel, boil, and cube the potatoes in salted water for 20 minutes. Drain and mash, adding butter, egg, corn meal, and ½ tsp. salt. Mix well and refrigerate until the potatoes are cold.
Divide the potatoes into 10 portions. Sprinkle corn meal on one hand and carefully spread one of the potato portions on your hand flattening it in the middle. Take a tablespoon of prepared picadillo and place it in the middle carefully folding the sides over the meat until it is completely sealed. Sprinkle a bit more corn meal on the relleno to form a very thin coat.
Fry over medium high heat until golden.

It's called Campbell's Fiesta Nacho Cheese soup. They also make the plain cheddar soup. Both are in the regular cans. If you can't find the spicy one, you could add another can of the plain cheese soup and a chopped up jalapeno pepper.:pissed:

Just found this thread and am feverishly writing down the recipies. Tonight DH grilled out some steaks, and I steamed some fresh green beans and made my quick strawberry angelfood cake mixed up desert. It is really yummy, simple and not so guilty! Just tear up some angelfood cake, slice up strawberries, and mix together with whipped toping of your choice. You can also use instant pudding mix with the whipped topping for a custardy kind of texture. (Sugar free is good too!) This is a great quick desert that I take to family gatherings-- and since DH had a tough day I thought we could be a little bad.... Although we ate Graeter's Ice cream last night...yuuuummmm...It's like eating a whole candy bar in the richest ice cream.. :::droool:::

Finish with cheese and salsa and bake until it's a big, starchy, spicy, cheesy mass--20 minutes or so.
If you want to make a stab at health, serve with a green salad. If you want to up the starch content, add corn to the beans.

I'm on my own tonight (Monday thru Friday), so I'll probably have one of my low fat entrees....BUT I'll sneak a chocolate or two in there early this afternoon. :bored:

Really easy too:
All you need is chicken, cheese and tortillas. And salsa/sour cream/ other things to dip in.
You could put onions or peppers or anything you wanted in them but that's just more work :calm:
But what we do is chop the chicken into strips and cook it on the stove top. Put chicken and cheese on a tortilla and top with another one. Then get out the george foreman grill and put 'em on. Cut into fourths with a pizza cutter and enjoy :whoohoo:
So good with salsa and sour cream :D

:drool: Oh my! You just had to mention Prime Rib! Reading these posts makes me feel like those commercials for the Lean Cuisine (I think that's the brand), where they all say what they had for dinner the night before...
One says she had half a box of dougnuts, and the other says, a spoon full of peanut butter and a half eaten something or other, and the last says this amazing sounding dinner, and they all look at her as she says, "Its one of those lean cuisine dinners!"
I think it might be boxed pizza tonight. Not sure. Hubby said he was bringing something home-that's probably what it was. Pay day tomorrow, don't have much in the fridge/freezer. Atleast nothing I want anyway.:purplex:

I tried this tonight for the first time; it was good!
Peel and core the onion, making sure you don't cut all the way through. Fill the hole about half way with butter, insert beef bullion cube & top with more butter. Bake at 350 degrees in a covered dish. Bake time depends on size of onion. I had the big ones and they took all of an hour.

Leave in the fridge for at least 24 hours, then cook on low heat in the oven , 200 degrees, overnight for about 6-8 hours, depending on how big the brisket is. Do not cut any of the fat off before cooking, place it fat side down .

Hi, sorry can't help with the recipe, but wanted to say I was thinking the same thing about the dinner thread at LHC. Then I thought that people would mostly post over there and then there wouldn't be this fun delicious thread over here to visit.
There's a thread on LHC called What's your specialty" you could revive that and turn it into a recipe thread of sorts.

I had Chinese chicken salad with fried wontons and rice noodles for an early dinner and some chicken broth with ramen style noodles, fresh ginger, and a few garlic cloves later in the evening to stave off a sore throat. I love ginger and garlic. Oh, and toasted sesame oil. Gotta have it. ;)

And may I say, putting dinner together when there is a "boil water advisory" is no picnic! Tomorrow, it's frozen potpie.
Our whole area has the advisory due to all the rain and flood conditions. It may be like this for a few days. I couldn't even buy a cup of coffee on the way to work cause no one can brew! What does Starbucks do when they can't make coffee? They sell pastries.

Oh, I'm glad you are feeling better. I hate being sick-don't we all. Did you eat some soup with the hot mustard or just the salad? Nothing like fresh greens to give yourself a healthy dose of vitamins.
For tonight, nothing exciting. Digiorno again (same as last Friday-how boring). It was on sale and I'm just plain too tired this week. Mom gave me a great recipe for chicken and wine though that I can't wait to try. I don't have the ingredients though so it will have to wait.

Well, the salad was great, but it's the soup that really gets me going. I eat it at least 3 days a week. I think I forgot to mention that I poach an egg right in the middle of it. This past week, I've been adding some chili flakes to it for some added heat to help clear my head. I will have to try some hot mustard sometime instead as I'm sure it would taste better.
Last night was sloppy joes. Tonight's still up in the air, but I'm craving Domino's Chicken Kickers. :drool:

A "boil water advisory" was issued by our local water company due to the flooding along the Susquehanna River. The river water rises and interferes with the water sanitation process, possibly allowing bacteria into our water supply. So, we have to boil any water used for human consumption for one minute before drinking, washing dishes or clothes, even brushing teeth.
All the local Starbucks couldn't brew coffee since Monday. Today, though, the advisory was lifted because the river level is receding. Thank the Lord!

Last night it was seared filets with rosemary garlic butter; mushroom, leek, and spring onion risotto; fresh corn. Broiled peaches with mango sorbet for dessert.
(and I had a caramel crunch bar on the drive home from the store :parp: It's that time again :depressed: )

I miss seeing this thread everyday. I assume everyone is back over at at LHC and not much going on here. So I'd like to revive this one. Here's what I had-you'll be proud of me!
A large plate of the following: raw red cabbage, 3 tomato slices, sliced peppers, pickle spear (dill-not sweet), some grapes and 1/4c- 2% cottage cheese. Oh yeah, I did have a couple blue tortilla chips (organic unsalted) before dinner. Was hungry. Then for dessert, 1/2c Healthy Choice peanut butter icecream. Only 1.5 grams total fat, 100 calories. Yum!!!!!!!!!!!!!! And the best part is, I'm stuffed. I had a slice of low fat ham at lunch time so wasn't worried about the protein.
(Not following any particular diet. I've done the counting and weighing and all that. I find the best diet is the easiest and most pleasant to follow. So I am just trying to do less red meat, less empty cal.s, more whole grains, and eating my veggies raw whenever possible. My favorite way anyway.)
Now if I can do this everyday, I'll be a size 5 in not time! I know, don't throw tomatoes at me, its not about size-it's how you feel. Blah Blah, who are we kidding. Size does matter! :lol:

I made seven layer dip yesterday and ate my half of the leftovers. I put sliced black olives on the top of half of it for cyk. BLEH.
Spread about 3/4 of a cup of sour cream on the bottom of a casserole . I use a square one that has rounded corners. The next layer is a can of refried beans. I stir them well before spreading them over the sour cream layer. Next is light layer of chopped onions, I used Vidalia. Then a layer of creamed avocados. I get this already prepared in the vegetable section at Walmart. A layer of salsa. Top it with about a cup of shredded cheese and then sliced black olives. Plain Doritos, of course.:lafhard:

Time to revive this as I love to eat and read about food. Tonight I cut up some chicken, about a half a breast per person. I cooked it in a bit of olive oil, with garlic, salt and pepper. Then I added a jar of pasta sauce, the tomato kind with herbs and spices in it. Then I added a half a bag of fresh spinach. I cooked for about half an hour and then poured it over spaghetti with freshly grated parmesan on top. Yummy.

I was brave today. I fixed some mixed veggies and warmed up some brisket in the micro. The brisket was pretty lean. I dipped it in BBQ sauce. So far, my gall bladder is not reacting, but I don't think it will. Taking the Prilosec and really cutting back on fat. Spicy is ok, fat is baaaaaaaaadddddddddd. Isn't that odd? I can eat all the onions and garlic I want!:gurn:

Today I made pizza from scratch. As I wrote in my blog (why keep a blog; I now believe there's a thread started for everything I write about in my blog, LOL!!)......'monk's' version for DH.....tomato sauce, mozarella
cheese, oregano. He likes bland food. Pizza is actually, almost exotic for him.
My pizza was 'loaded'; tomatoes (not sauce, but frozen-from-garden chunked), mozarella cheese, onions, olives, dollops of my home made pesto, mushrooms, anchovy and capers along with the essential olive oil, chopped garlic, grated romano and oregano.
It was the first time I ever used capers. A TV cooking show recommended rinsing them from the jar before using. Interesting, usuaual taste.

I made felafel patties, and wrapped them in mountain bread, with crisp lettuce, tomato, grated carrot and a little cheese, with a garlic-mayo dressing. Simple, but lovely.
Edited to add: I love threads like this, I love reading what others are eating, and it gives me ideas for new meals to cook. Keep posting, everyone!

It's sunday, so it's Roast day, but today we are going to have our dinners in giant yorkshire puddings. For no good reason apart from the fact that it's fun! :)

steamed vegetables with tsaziki (sp?) sauce, a Greek salad with pomegrnate reduction, and whole wheat pita bread

Creamed potato & sweet potato. Steamed cabbage and pork in a yummy sauce I saw on the tv last week. (Finely chopped onion browned then add 1tbsp of strawberry jam and a healthy splash of red wine and reduce).
Fruit salad for dessert.

We had hamburgers with mushroom soup gravy and leftover potatoes 'n onions. We didn't have any veggies in the house, so we didn't worry about them. :)

Grilled fajitas with red bell peppers and sweet onions, on soft flour tortillas. Funny, spicy doesn't bother me at all. But I sure have cut wayyyyyyyyy down on my fat intake and I can feel myself shrinking in some places.
