View Full Version : Tasty appetizer for those endless summer nights

Hereīs what I came up with today resorting to what my fridge would yield:

Slice 2 tomatoes and spread in casserole. Sprinkle generously with herb-salt, black pepper and olive oil. Grate some pecorino cheese and put on top of tomatoes. Take half an old, dry, leftover roll or similar, toast until even drier. Crush it and mix with salt and a fine-chopped garlic clove. Spread on top of pecorino cheese. Sprinkle generously with olive oil. Add fresh herbs as desired (rosemary would be very suitable). Dump it in the oven (donīt forget to turn it on) for about 15 minutes until nicely browned. Enjoy!

Serves 1 person as an appetizer. You can just hear the Mediterranean in the background...

Sounds good, I just might try it!:cool: I had to add something else; I really like tomatoes, hated them when I was a kid.

That really *does* sound good. I love tomatoes..especially little cherry ones. Sometimes I can eat a few cherry tomatoes as if they were grapes :happy:

Tomato sandwiches are also quite lovely, though more of a meal than an appetizer :)


Edit to say...:

VV I see I'm not alone on the toasted tomato sandwich front :lafhard:

OMGoodness Calista that sounds delicious, my all time favorite is toasted tomato sandwich so I would love this, come on over and show me how to make it and we can share. :grinhappy:

Another fan of toasted tomato sandwiches checking in. I like mine with pesto sauce and mozarella cheese! So quick and yummy. This recipe sounds amazing, Calista! Can't wait to try it.
