Hereīs what I came up with today resorting to what my fridge would yield:
Slice 2 tomatoes and spread in casserole. Sprinkle generously with herb-salt, black pepper and olive oil. Grate some pecorino cheese and put on top of tomatoes. Take half an old, dry, leftover roll or similar, toast until even drier. Crush it and mix with salt and a fine-chopped garlic clove. Spread on top of pecorino cheese. Sprinkle generously with olive oil. Add fresh herbs as desired (rosemary would be very suitable). Dump it in the oven (donīt forget to turn it on) for about 15 minutes until nicely browned. Enjoy!
Serves 1 person as an appetizer. You can just hear the Mediterranean in the background...
